If you're craving warm, seaside nights and fresh fish dinners— boy do we have a meal for you! This easy Cod with Tomato Sauce recipe, is perfectly decadent with a rich creamy tomato and wine sauce, and blistered tomatoes. What we love most about this dish is that it can be served on its own, over grains like farro or barley, or even over fresh pasta (we recommend fettuccini)!
- 1 1/2 lbs cod fillet, cut into 4 pieces
- 3 teaspoons chopped fresh thyme, divided
- 1/2 teaspoon salt, divided
- ¼ teaspoon freshly ground pepper
- 1 tablespoon extra-virgin olive oil
- 1 shallot, thinly sliced
- 2 cloves garlic, minced
- ¾ cup white wine
- 1 cup cherry tomatoes, quartered
- 1 jar Pasta Jay’s Creamy Tomato Sauce
- 8oz fresh spinach
- Parsley or Dill, chopped for garnish (optional)
How To Make
STEP 1: Season fish with 1 teaspoon thyme, 1/4 teaspoon salt and pepper.
STEP 2: Heat oil in a large skillet over medium heat. Add shallot, garlic and 2 teaspoon thyme; cook, stirring, until shallot has softened, and mixture is fragrant, about 1-2 minutes. Add tomatoes to the skillet, cook until slightly softened and blistered, about 3 minutes.
STEP 3: Add wine and fish to the pan; bring to a simmer. Cover and cook until the fish is almost cooked through, about 3-4 minutes.
STEP 4: Add Pasta Jay’s Creamy Tomato Sauce and spinach to skillet, simmer until fish is full cooked, sauce is warmed through and spinach is wilted. Season with Salt & Pepper to taste.
STEP 5: Divide sauce and fish between bowls. Garnish with fresh Parsley, Enjoy!
