Pasta can seem intimidating, especially if you’ve never gone full hands-on to make it yourself. After all, pasta comes in a variety of color and over 600 shapes! However, it’s one of the simplest recipes you can make at home yourself. It’s quick, rewarding and so tasty you’ll never want to eat pasta from a box again.
Keep in mind that there are a lot of pasta-making tools out in the world, and why sure, they make things a bit simpler, easier or faster in their own way. However, you don’t actually need any of these tools in order to make great pasta in your own kitchen.
A pasta dough ratio is 3 parts flour, 2 parts egg.
Easy, right? All you need in your pantry is flour, salt, olive oil and eggs. Simply start by putting the amount of flour you want down on a clean counter top or other surface (the ratio listed above is about 1 serving, so multiply for the amount you will need!) Create a bowl in the center of the flour pile, not so deep that you can see the counter at the bottom but large enough to place your eggs into.
Crack the eggs and place them into the bowl in your flour pile. Sprinkle a bit of olive oil and some salt for flavor (measuring by eye) and begin whisking the eggs with a fork bit by bit so that each time you circle with your fork, you’re adding more and more flour into the egg mixture. Once you have a dough forming, you can switch over to kneading it into a ball by hand.
Kneading is arguably the most important step because you’re mixing the dough and working it into a smooth texture. Fold the dough onto itself in a circular formation until your arms are tired, and then a few more times for safe measure. You can’t really over work the dough in this step, so more is better!
Cover with plastic wrap and let rest for 30 minute up to an hour. You can then roll and cut the pasta into your desired shape, or use a pasta maker to split the dough into noodles. Cover with plastic wrap or a clean cloth, so they are not making contact with the air, and immediately cook in boiling, salted water.
