We love taking simple snacks to a whole new level with real food ingredients! These Chipotle Shrimp Quesadillas are stuffed with cheese, mango, tomatoes, and shrimp that's has been marinated in beer and our Smoky Chipotle Cooking Sauce. They're a little sweet, a little spicy and BIG on flavor!

INGREDIENTS
- 1/2 pound raw shrimp, peeled and deveined
- 8 ounces of your favorite beer + 2 tablespoons
- 2 garlic cloves, minced
- Zest from 1 Lime
- Juice from 1 Lime
- 2 tablespoon Schultz’s Gourmet Smoky Chipotle Cooking Sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 large tortillas
- 6 ounces freshly grated Monterey jack cheese
- 4 green onions, sliced
- 1/2 mango, peeled and chopped
- 1 cup grape tomatoes, quartered
- 1 cup shredded lettuce, optional
How To Make
STEP 1: Place the shrimp in a large baking ziplock bag. Cover it with the 8 ounces of beer, lime juice and zest, Schultz’s Gourmet Smoky Chipotle Cooking sauce and salt & pepper. Refrigerate and let marinate for 30 minutes to an hour.
STEP 2: Once shrimp is done marinating, heat a skillet over medium high heat and add the shrimp with the remaining 2 tablespoons of beer. Cook until the shrimp is pink and opaque, abut 3 to 5 minutes.
STEP 3: To make the quesadillas, heat a large nonstick skillet or electric griddle over medium-low heat. Add a bit of cheese directly to the skillet and top with a tortilla (this will ensure a crispy cheesy crust on the outside) , add a layer of cheese to the first tortilla, then top with shrimp mango, tomato, onions and lettuce. Add remaining cheese, then top with a second tortilla. Cook until the cheese is melted, and the sides of the tortillas are crispy.
